- Smoked Goose Breast on Waldorf Salad with Garlicky Walnuts

The chefs at the award-winning Rannoch Smokery based in Kenmore, Perthshire have created a wide range of recipes using their smoked venison, poultry, game and salmon products. The recipes have been tried and tested and the company has kindly agreed to allow some of them to be included in the Rampant Scotland recipe section. Here's a recipe for smoked goose breast on Waldorf salad with garlicky walnuts to try!

Ingredients (serves 2):
Salad
3 ribs celery including leafy tops, sliced
1 large red apple, cored and chopped
1 teaspoon grain mustard
1 tablespoon mayo
1 tablespoon creme fraiche
1 tablespoon chopped chives
Squeeze of lemon juice
1 tablespoon sultanas

Topping
2 tablespoon olive oil
1 tablespoon chopped walnuts
2 cloves garlic finely sliced
1 tablespoon chopped flat parsley
1 smoked goose breast sliced

Method:
Gently mix all the salad ingredients together in a large bowl.
Heat the oil in a small pan add the walnuts and garlic and cook for a couple of minutes until golden. Remove from the heat and allow to cool for a minute or two before throwing in the chopped parsley and mixing it through.
To serve, place a spoonful of salad on each plate. Top this with sliced smoked goose breast and pour over the garlicky walnuts.
